I just rebuilt my motor & Trans in a 1985 and i,m have a few little problems
1) I need to know what my temp should be
2)My air was blowing very very lite but now its not blowing at all
3)Now it seems like my front winshield is always foggy

For an 85 with no cooling mods, coolant temps will rise into the 230s fairly quickly. The oil should be about 15-20F hotter than that, but if the coolant rises into the 240s, get the car moving or shut it down. Regular oils break down in the 250 range, and head gaskets tend to blow at those temps too.
If you ran Mobil 1 oil, you never have to worry about its temps really.
Optimally though, oil temps would be about 200-210F and coolant in the 180s.
There is a procedure in the Manual for troubleshooting the AC controls, or perhaps your blower has died. Also run a search on PurpleC4's posts about cleaning up the AC. Sometimes the airflow is blocked up.
Id make sure the AC Compressor is engaging.
