Well the exhaust pipe on a stock LT1 is 2 3/4 so 3 inch is too big and 2.5 inch is too small.
I went with 2.5 inch and had the muffler shop expand the inlet on the muffler. It was very easy for them to do, probably easier than trying to shrink it or expand the pipe running to it.
offset in / center out is what you need in whatever size you decide on.
