One sensor is the Engine Coolant Temp sensor for the ECM. The other I could find little information for, I have only seen it refered to as a thermo time switch.
The thermo time switch is for the cold start injector. You don't need this with the miniram or superram so you can leave it off and no codes will be set.

I'm talking abot the EGR connection that is mounted on the rear of the thermostat housing it also has some vacum lines comming out of it. When I unhook it will it set off any codes cause the Mini Ram does not have a EGR setup

yes your car will set off codes for EGR. There are three conditions that must be reached for EGR to funtion. TB postion, steady speed for a given time @ a given MPH or above, and something else engine temp I think. If these three things are not all meet at the sametime then EGR doesn't even open/funtion. So if you don't ever meet these then chances ar eyou will not see the SES light for EGR, however if you drive on the interstate a good bit then you will. You will need to run a new vac line to bypass the EGR selonid(spelling?). It has a constant vac and allows vac to the valve when the above are met. If you get a chip burned just have them take EGR out.

everything related to the EGR can be tossed into a box and put away in the garage (that includes: egr valve, vaccume control switch, and the temp sensor on the flex pipe).
your going to need a custom e-prom (ECM chip) to get it to run right anyway, so just have them turn off the EGR diagnostic in the prom.
