I wouldn't worry until it gets to the shaded area of the gauge.

I've run as hot as 250 on my oil, but normal seems to be anywhere between 210-230.

My oil temp seems to be always under 210 no matter what the ambient temp.

Those are reasonable temperatures for synthetics. For non synthetic you are on the ragged edge for normal oil life.

A wide variety of OEM engine devlopment people will tell you that long term temps over 250-255F in the sump are not good with conventional oil.

That is NOT normal for normal driving at 60 mph. None of my 3 C4's ever saw above 235 and that was only when going up long (3 miles and more) grades at slow speed. On the highway at 60 mph I see about 210 (factory stock thermostat in all) no matter what the outside temperature. At 100 mph it never goes above about 218 (even when outside temperature is 100 and AC is on) . The oil should be about 10 to 15 degrees hotter than the water temp. Water temp on your car sounds right. A temperature of 260 at the sensor means about 300 to 310 at the journals. While synthetic can handle this (but not much more) I would replace or test the sensor or more likely the gauge. Continue to look for the cause as this is definitely not right and oil wt. (5-30, 10-30, etc) or LT1 or L98 would not matter. Do you notice any small metal flakes in the oil? Sorry to say this.
