Valve cover baffles
As you already know holes have to be cut into the covers and their positioning is critical so as not to interfere with any of the valve train parts. Even though yours are tall, you must consider that the baffles will extend down toward the rockers.
Do you best to find a shop that is familar with doing the job so they don't turn out scratched or with jagged edges, etc.
Do a trial fit first to make sure the new covers won't need to be sectioned in the area of the windshield wiper motor.
Late last year I installed a set (came with no holes too) on a 434 in a 86 Vette and had to have the driver's side cover notched to clear the wiper motor.

You might want to re-think the "tall" part if it's going to involve notching the driver's side rear cover for clearance. Unless you plan to run a stud girdle, you may not need tall ones.

As for the baffle system....Good luck. I am fighting that exact problem as we speak. My crankcase evac system pulls 5"+ vac at idle!!! Therefore any oil splash that even gets close to the breather is sucked into my collectors where it proceeds to smoke like a ****.
Last night I put some small air/oil seperators on the lines. They worked great till they completely filled with oil in about 8miles!!! Both sides. :rant:
Problem with my system, is as the RPMs increase, my system sucks harder and harder up to about 8" on each side! Contrary to the stock setup, where oil splash at idle is minimal, mine increases as RPM increases, this speeds up the entire process.
The system I thought when I put it on there would be a waste of time and wouldn't hardly pull anything, which is great for WOT were you need the vacuum, and the stock system lacks. But the oil problem has gotten to me. Tongiht I am going to give it one last shot, putting filter foam in there to try to absorb/slow down the process. If that doesn't work I bought some K&N press in breather and the evac system is getting removed and put in the "Tried and Failed Pile of Wasted Money" :lol: :rolleyes: :mad

Well, that's good news for 89 owners, Jesse. As I said I had to have Steve's notched, but his is an 86. I remember one other Forum member had to have his notched too a few months ago, but he may have an 86 also.
I remember seeing some Edelbrock covers that come with baffles and I saw another set (forgot which brand) at Pep Boys that had baffles too, but they weren't installed. I believe they were bolt on.
I've got a PAW telephone book-size catalog downstairs. I'll check it out and post any that I find that have baffles.

WYS-WA6036;WYS-WA6037 (both are stock height though) but come with screw on baffles and are center bolt.
GM PRF-141-107; they're short too, but have baffles and are center bolt
GM makes an adapter allowing you to use flange mount covers on 87and up center bolt heads GMC-24502540
Milodon makes a tall, baffled chrome cover but it's not center bolt; MIL-85500
Moroso makes a tall, baffled die-cast aluminum MOR-68401, and a chrome tall one MOR-68101, but they're flange bolt too. Moroso also makes a baffled cover specifically for the 88-92 Vette - MOR-68034 polished cast aluminum, but I'll bet it's not tall.
TDP-9702, baffled, center bolt but not tall.
Man, this is getting frustrating.
There's rubber push in oil baffle and breather grommet WYS-WA9358N for retro-fitting non baffled covers. Has an angled bottom and a foam insert.
Mr. Gasket sells a dual baffle breather with a built in PCV and has a 3/8th nipple for attaching a vacuum hose.
I see what you mean, Jesse. Finding TALL covers that have BAFFLES and are CENTER BOLT isn't too easy. I was wondering if B&B makes them; they make some 'one-off' stuff.
So far it looks like these are the options:
Use the GM adapter and run flange bolt covers or
Go with stock height covers that have baffles, or
Drill the tall covers, fabricate and install baffles inside, or
Drill the tall covers and use one of the exterior breather/baffle assemblies.

So, let's say you have heads set up for perimeter style covers. Then you can more easily find a set of covers that are tall and have baffles.
But if your heads are set up for only center bolt covers, then you're either stuck with short covers with baffles OR you have to buy the GM CNC adapters and then you can use perimeter style covers that are tall and have baffles.
Another option is to elimincate the PCV setup all together and run tall stand-off tubes with breathers on each cover. Kind of that "circle track" look.
If emission testing is a concern, I'm sure that arrangement won't past the visual and running hoses to the collector won't allow the car to pass either. Not to mention that setup will kill the CAT(s).
Unless you make the internal baffles, I don't know what else you can do but change the covers.
Rock and a hard place.

The problem is the heads, themselves. They have to have holes in the correct places in order to be able to bolt on the covers.
I see that he has Dart heads, I wonder if he's refering to the heads as being setup to accept either type of valve cover :confused: . If so looks like he'll be alright with one of the options you gave him in a previous post. :thumbs:
