Anyway, I fall in the stupid people category, so can someone explain the low and high impedence of the injector is all about?

Impedance is resistance. If you put low resistance on something (circuit driver. in this case the pcm) that is designed for high it'll allow too much current and will eventually burn out. Just like shorting out an audio amplifier.
This is at least how I understand it..

Low impedance injectors allow about 4x the current to hit the coil and therefore have way more power to move the pintel. This is why they can be much larger and more responsive than high impedance injectors.
They require a much more complicated driver circut that will peak, then hold the coil open. So full current/voltage is applied to open, but then reduced to 1/4 just to hold it open. If you did not do it this way, the coil would quickly burn out.
High impedance injectors are super simple. You just apply the full current to open and leave it that way until you want to close it (known as saturated mode). The high impedance/resistance is what keeps the current to the coil in check. This results in a much weaker mechanism to control the pintel/disc.
There are boxes that can convert a simple 12v high impedance signal to a low impedance peak and hold signal. Our PCMs can only apply a simple saturated signal to the injectors. In fact, I think the PCM just grounds each injector to pulse it.
There are some people that take a normal high impedance saturated signal and put resistors in front to run low impedance injectors. This is extremely stupid, since the injectors are running under very low current all the time and they end up performing like crap (if they even work). You have to have a peak and hold driver to run large low impedance injectors.
