Good question. Was wondering the same thing and even discussed this last night. I'm thinking boost/vacuum and fuel pressure.
I like the Cobalt gauges.
In my supercharged/nitroused Camaro, I started w/boost and fuel pressure gauges (in the dash) and then eventually added an air/fuel ratio gauge (on the pillar). It's much easier to glance at the air/fuel ratio gauge and see what color range it is in, whether lean, stoich or rich. The only issue is: if you like a "calm" non-distracting passenger compartment, this is not the gauge for you. The one thing that bothered me after the install, was that the gauge is constantly flashing/moving trying to get a reading of the air/fuel ratio until you nail the throttle and it is pinned. So... it can be a bit of a distraction (flashing around) if you're not use to it. The good thing though, is if you ever go lean, it will flash red and you'll know to get off the throttle. It's all a matter of preference but I think I personally will go with just the boost and fuel pressure gauges this time.
I'm wondering if there's any other place to mount the gauges besides the pillar...
What about Aeroforce gauges? That's the direction I'm leaning because they can read anything that the car monitors and display two fields per gauge. Never used them though so can't speak from experience yet.
The interceptor gauges work amazing and offer a split screen displaying OBDII data as well as a single analog input for each gauge. These are truly a fantastic gauge to buy eliminating the need for multiple gauges. On one gauge you can display OBDII data such as IAT, KR, etc and have an analog for boost, air fuel or fuel pressure
I have an AEM wide band and the Aeroforce with the fuel pressure sender. I also have a 2 bar MAP so it reads boost although a C5 cannot do this as easily, you would need to run the stock MAP and pipe a 2 bar MAP into one of the Aeroforce's analog inputs. The gauge and the FP sender were as much as an EFPG would have been and I can display KR, IAT, boost, fuel pressure, and pretty much any other OBDII parameter. I also pipe the output of my WB into the Aeroforce for the alerting. you can set up an alert for parameters passing thresholds. Up to two individual parameters in an OR or AND function. So mine is Boost > 3# AND AFR > 12 and it lights up the bright LEDs. You could also do something like IAT > 125 OR KR > 2.
I kind of wish I got the red display to better match the AEM instead of the stock gauges.

I had to do some digging as well. I was pointed in this direction and is what I ordered. GWK GM 1997-2005 Corvette Full Pillar Triple Pod for 2-1/6 Gauges

Do you have a picture of how this looks installed?
Not yet, as I will be installing it once we tear the car down for the engine swap.. I know there are a few people using the same one on the site who recommended it to me.
You can see the SPA gauge here: http://www.fiperformance.com/dg216.htm. Play the video to see the SPA and AEM digital wide band in a two pod A-pillar. This setup is identical to mine except I went with the Innovate XD-16 with LC-1 wide band. The Innovate WB gauge looks similar to the AEM digital, except that the Innovate has an auto dimming feature for night time.
I bought my SPA gauge and A-Pillar from this vengor (FIA Performance). They are a supporting vendor.
