When I start the car, or when I step on the go-pedal, I hear some knocking. It's pretty loud. . .at first, I started thinking the worst case and figured I may already have a bent rod or something, then I realize, if I put the car in neutral and try to hit the gas, the noise does not continue. . .any ideas?
With a bent rod your car may not even run. Rod bearing possible. But a light ticking/knocking sound could also be a loose piston ring land just going along for the cyclical ride and making noise.

Hmmm dipstick poping out during WOT in cold weather now a knock at no load.......

Piston slap when it's cold out is very common. Got it too, and had it in my LT1 car, but I'm not there too hear it so I couldn't tell ya. Just figured I'd give ya another possibility.
