It's more personnel preference than anything. I had mine Jet-Coated primarily for the looks, with the added benifit of a little less heat transfered to eng. compartment.

The coating really does make them look a lot better. Percentage wise how much more or less temp is transfered or does anyone know? I would do it just for the looks.

If your headers are made of mild steel (which many are) and not stainless steel, then it IS a good idea to get them ceramic coated. When they ceramic coat headers they are done inside and out.
The benefits to ceramic coating.
1) As you've seen above in Z06-JIM's reply, they look much nicer
2) It will help reduce heat in the engine compartment.
3) It will aid in the flow of exhaust gasses through the pipes.
4) It will keep mild steel pipes from rusting out from the inside out.

Number 4 is important to steel headers. You will get many more years of use out of the headers with the coating.
