1999 C5 Coupe
Any suggestions or thoughts would be appreciated.

They posted the wrong price in the local rag and I held them to it.
Also threw in a Deluxe Warrenty for $2500. (5 yr or 50K)
Had 54k on it.

As far as the 99 coupe with 68K miles for $25K - that sounds a little on the high side to me. I would think, depending on where you are buying, the price for a car like that would be in the low $20's.
Naturally - more options like HUD (introduced in mid year 99) active handling, 6 speed, low mileage, Z51 suspension or F45 sill raise the price slightly. I wouldn't pay a lot extra for owner installed mods, neither would I deduct for them.
Once you narrow your choice down to a car - I'd recommend an independent inspection by someone knowledgeable on Vettes and providing CF Member Sponge Vette with the VIN - he can run a service and origination history on the car for you, so you can tell if there are any outstanding recalls on the car, or if there has been an extensive repair history. Car-Fax is only as good as the information provided by the various reporting agents, so I personally don't place too much stock in that.
Good luck with the search, and welcome to the Forum!

The Best of Corvette for Corvette Enthusiasts
In my opinion, if it's really the car you want, and you're going to keep it a long time, a grand either way is money well spent, rather than years of ownership saying, I wish I'd found a car with... (HUD, Chrome Wheels, Less mileage, etc).
Find the car you really want and don't look back... the view out the windshield is fantastic.
