The biggest thing is not to drive it in the rain or on wet roads. Dirty water throws junk into every nook and cranny, not to mention throwing small rocks on the paint.

I've had my car since it was relatively new and have made a practice of wiping down the engine bay at each wash. If there gets to be some grease on the motor, I use a rag and some Simple Green to take it off.

Other than that, I keep the car clean by washing it frequently.

I bought a hood seal to help keep the engine bay a bit cleaner.....it works. I also dust the bay every few days with a swifer duster or my California Mini duster. A little dusting every so often will prevent major cleaning!

I wipe the engine down after washing when some of the components are still damp. NEVER spray the engine down though, especially with any high power sprayers. Simple Green is awesome, use it on aircraft engines all the time.
