275's will fit, as will 295's and 305's.
However, the 305's may provide some 'rub', so it is best not to exceed 295's.

I've heard that 275's can be a little more wild than the 295's as they "light-up" easier... but they will work, along with the 295's.

Go with the 295/35/18s on the rear. Stock Z06 size and will look very good.
