A Newbie! Why, congratulations, and, a warm welcome to the CF family. And, yes, the EMT's are the "Extended Mobility Tires". However, they are more affectionately, OR, should I say PRECISELY known as "Runcraps". Regardless, there are a multitude of tire brands available to you. Enjoy your new C5, and, welcome to the fold.
From what I understand, the Michelins are repairable if you get a puncture on the tread, where the Firestones are not repairable at all.
The Goodyear F1 EMT tire is able to provide you with a 50 MPH road speed for up to 200 miles with no air pressure in the tire. In order to achieve that, back in the mid 1990's when the tire was developed, special compounds were developed for the tire construction and special reinforcements were put into the side walls of the tire. The compounds resisted the heat build up from running with low air, and the stiff sidewalls prevents the rim from cutting into the tire when deflated.
However ... that was 1990s technology and were some tradeoffs.
The tires are crazy heavy, heavy tires affect your vehicle dynamincs adversely. Switching to lighter tires will improve your cars handling.
The extra stiff sidewalls also make it easy for the car to "track" in ruts on the road way. There is one section of I-15 here in San Diego that grab onto the front of the car like a pit bull.
The compounds and the stiff sidewalls limit the tires ability to provide the most grip during acceleration... although you've realized that the C5 Corvette is no slouch, you can make it better.
The most important factor people consider when switching from Goodyear EMTs .. the noise. Oh god are they noisy...

Oh yeah.. cost. Non run-flat tires cost less to replace... so although you're spending some cash now to replace them, down the road they'll hit you for less.

Increase the tire pressure.
On our 1994 C4 with FX3, an increase from 30 to 33 made a world of difference.
On our 2000 C5 with F45, an increase from 30 to 32 also made it ride better (but still too new (to us) to decide how far about 30 we will end-up).
btw, what prompted the pressure change on our 1994 was learning GM has reduced the tire pressure in 93/94 from 35 PSI to 30 PSI due to harsh ride complaints.

I recently replaced my worn out Goodyears with Michelin Zero Pressure All Season tires. The Michelins are smoother (they're new!), but I can't really tell that the handling increased markedly (except for less groove-tracking, but once again, they're new), and the car seems to 'float' more at higher speeds. They are, however, significantly cheaper than the Goodyear EMTs.
In my opinion, the Goodyears looked better on the car. The rears seemed wider in appearance and to have a flatter looking tread than the Michelins.
