I'm doing a statistics project which will be looking at the accuracy of the C5's computer at calculating fuel economy. I was wondering if you guys would be able to post what the computer reports the average fuel economy to be and what you have calculated your actual fuel economy to be.

I actually find it to be very accurate over the long haul, it is the tank to tank mesures that are variable.
I have a spreadsheet for each corvette showing every fill and prices for each fill over the course of our ownership.
My spreadsheet average is within a fraction of a mile-per-gallon of the DIC average....
Since "miles left" is closely tied to each separate, individual tank of gasoline, and it largely depends on driving conditions and weight-of-foot at the time, it is widely variable and thus cannot be relied upon.
It is safer to just fuel-up when the reserve indicator comes on the DIC.
Exactly, the way the test would really have to be done is over a period of time with the same car, unmodified, with the same driver. Trying to use data from different cars, being driven by drivers with different driving habits, introduces too much variation into the data to build any meaningful model.
