The only year of a Z06 'vert was 100BC.
A few places will make your Z into a 'vert if you have the cash - it's not cheap to do it right.

I do not believe GM has built a Z06 conv..But even if they decided to convert a hard top to a a conv even they do not have to chop a top off....Some people really think there is chopping involved in converting to a conv...no chopping involved...Leave the word chop out...No such thing in this case.
We're talking about a Z06. So how would you propose to remove the FIXED ROOF without cutting?

I have a 2002....The roof panels are bolted & urethaned in place...remove bolts remove urethane remove roof...I converted my Z06 plus one other...I also modified the original roof with original glass to be used with ragtop down & hardtop in place. One might say why convert..I would say why not if thats what you want...You can always reverse the procedure and have a fixed roof again. Hence user name Z06CONVSC.

I watched my whole roof assembly come off the car in one piece, no cutting of any kind required. The trunk pan had to be replaced after the car was rear ended. I was amazed that the one piece roof, with the back glass still in it, was so light.
