Horsepower ratings ???
Can someone tell the horsepower rating for an 02, 03, and 04 C5 vette ?

If I remember right, it's:
350 for C5s (and 405 for the Z06s)

Hum, I thought that maybe some were rated at 345. Like my 2000. Not like it matters..

Right on. 2000 was the last year for the 345 hp rating.

So does that mean that from 01 on, all the vettes got the LS2 intake ?

No. All model year 2001 and later C5s received the LS6 intake manifold:
