Another Break Thread - I would like some feedback

I have a 2000 Convertible with the Z-51 suspension. I have a lot of clunking noise from the rear brakes when I apply and when I release the brake pedal. I am not sure what it is, but I wanted to go ahead and replace the brakes while I am tearing into the car.
That is where I need your help. What should I put on the car?
Rotors:
1. OEM (no better than what I have)
2. NAPA (cheap)
3. Brembro drilled & slotted
4. Drilled only
5. 2-piece Eradispeed (very pricey)
6. C6 Z51 drilled rotors (if they fit)
Pads:
1. OEM
2. NAPA (or other off brand pads)
3. Ceramic (don't like dust, but can't live with the fade)
4. HAWK (kinda pricey)
I drive the car very spirited on the street (no street racing).
I have and will take the car to the dragstrip, autocross events, and track days (that let convertibles run).
I want looks and performance.
I am leaning towards some zinc plated drilled & slotted Brembo rotors and HAWK pads, but was wondering if the C6 Z51 rotors would work as well.
I have been round and round with brakes on my other cars. I have had some luck with that on-line auction site.
Please offer some advice and feedback on you personal experiences.

I have GM cross-drilled and slotted. I love the bling factor. I understand however that the heat cycle of the brakes will eventually cause cracks from the cross-drilled holes. If you only track the car a few times, this may not be a problem but I would wait for some feedback from the track guys. Better to be safe than sorry.
Best of luck.
