I will be in the market for a Z around the end of the year (I'm still trying to get rid of my F-body ). When will the prices start to drop?

Lowest Prices are typically in the October-December time frame. January is even better but there is no selection. I think November is optimal based on my experience last year. I should have only started to look in October instead of September. By mid December though, selection dries up.

If you don't like the look or haven't grown use to the look of the C6 ... I believe the C5Z is your best alternative. The FRC look is undeniably very pleasing to the eye. With the price of the C6Z's with most dealer's (adjusted market value mark up) nearing $85,000 and more ... many new performance/handling oriented Vette buyers will naturally drift down to the C5Z. Compare the prices of the 99-00 FRC's to a coupe and you will see that the difference in visual appeal and desirability raises the prices.
That $85,000 price you cited might have been true 18 months ago, but today, a new Z can be had for about $20,000 less. I was one of the lucky ones.
Also, it is just a personal observation but (most) Corvettes in California seem to be priced a little lower than on the East Coast. So when you do begin your search, be willing to travel. Do yourself a favor and Get the Corvette YOU want . There is so much more to it than $$$.

I notice that, yes. But the price to get there when I include my time is a real premium that couldn't really make up the gap.
