I have the Callaway throttle body on my car but unfortunately I can't provide an accurate comparison as it was installed at the same time as my other mod's.
I will say that it's superb craftsmanship and a nice complement to the Honker. It should give you a few extra hp and better throttle response.
I'll admit that it was hard to burn the $650.00 knowing that I could probably get similar results with porting/polishing my stock TB ($200.00) or add a little cash and get into a 90/90 set up which would be a big difference (maybe next year).
Our 78 mm throttle body is a good addition after you install headers and/or a camshaft and cylinder heads. Then it really helps. It only adds a few horsepower on a completely stock engine. We wouldn't want to see anyone disappointed and certainly don't want to mislead anyone.

Do you think I would see much difference with my set up? Currently have Vortex CAI, JBA shortys , Corsa Indys, with tune. Current numbers are 381/364 on 03 z06. Second question is on the Honker would it be a better choice than the Vortex or am I looking at about the same numbers with either? Thanks
