My first Vette was a Vert and my current a Coupe. There are advantages and disadvantages with a vert depending on where you live (weather wise). Living in Texas, I often only dropped the top at night in the summer/late spring, just plain too hot in the middle of the day. I had a lot more lookie-loos staring at me when had the vert (top up or down)
The Coupe doesn't quite have that "open cockpit" feel the vert did, but love the extra cargo space I have with the Coupe (my Vette is a DD).
I love the Coupe
and miss the Vert
Bottom line: IMHO, it all boils down to two things. Location and attitude
If this Vette will be your DD, get the Coupe. If not get the Vert (more fun)

I love my vert. Verts do seem to retain better resale value (all except the 1963 split windowwhich is more expensive than verts).
I Have a 80 t top also, and with the tops off it blows you big time,

I vote coupe. You asked about noise and security, the coupe wins hands-down. Also the coupes are not prone to leak like some of the verts do. I love the extra cargo space. I love all vetts, so I think verts are cool too, just I prefer coupe.
Legroom is fine in all there but DRIVE IT ON A BUMPY ROAD before you buy it.
BIGHANK

If you plan to take a lot of road trips with someone... and you want to be able to have a conversation with them at 75-80mph... the Coupe, I can tell you from our experience, it is loud inside.
It did not seem so at first, after we just got our C5 because we were so "stoked" just to be driving our own Corvette!
But after a few trips you notice, that you can't hear each others words without turning the radio way down and saying, "what?..."
I hear changing out the exhaust X pipes to H pipes lowers the interior volume on the Coupe.
As well as changing out from run-flat tires to regular tires (carry a can of puncture seal and an inflator in your cargo hold).
Also, the FORUM recently had a fix described by someone who expertly told (& showed w/pix) how they 'sound insulated' their whole interior which made a significant difference in making it "a lot quieter" inside.
So those options are out there if you are willing to shell out the extra dough... or to do all the extra work (a good winter project --- one that I am now seriously considering doing this 'off season').
But if it's just you solo... or your traveling companion never talks... then just crank up the radio and go for it if you get a better deal on a Coupe equipped the way you want it.
Good luck... but whatever choice you make... as long as it's a Corvette you'll be happy!
....ooohhhhhh,oooohhhh i'm doing it again.
You decide for me, i'm getting a headache.
