Yesterday, I went to the drags. Driving home, I noticed that my steering wheel was off center. I didn't hit any pot holes, curbs, or other solid objects.
My first choice would have been from hitting something whether it was a hole or good bump in the road, throwing the front adjustible steering componets off, I have not known any other reason(s) why it would have changed, they should/could be able to adjust and fix at the alignment shop. Just my opinion on all this, good luck, and I too will be keeping an eye on this thread.
Steering wheel centering is an adjustment. Typically set towards the end of the alignment process once the tech is happy with thrust angle, toe, camber. On a car with adjustable rear suspension. Set rear toe, camber, and thrust line. Center steering wheel. Set front toe, camber, caster, and adjust thrust line to rear thrust line.
I have had an issue once before with the alignment tech not tightening that adjustment down tight. The car drove true but it required the steering wheel to be off center. It's annoying.
You'll need to get the car into an alignment shop and have it checked. Even if it doesn't need other adjustments they're going to charge you most of an alignment because of all the setup on the rack. Might as well just get the whole alignment done. Now is the time to try those settings you were thinking about playing with
The toe-in is set last, and usually controls centering the steering wheel. If the toe-in has gotten off, it will make the wheel off center.
The total toe-in can be within range, but if more is taken out of one side, the wheel will be off center.
Yes it's something with the toe adjustment. Usually at an alignment shop, they'll set up some kind of brace to center the steering wheel, and to keep the wheel from moving as they adjust the tie rod sleeves. Not sure how the Vette is different, but this is how they've done it on cars I've had in the past. My '96 Impala had the off-center steering wheel issue when I first got it. They fixed it when I had alignment done after new tires.

I SEE THAT YOU HAVE A SUPERCHARGER INSTALLED. WHEN I PULLED THE RACK AND PINION TO PIN THE CRANK, WHEN I BOLTED THE RACK BACK UP MY STEERING WHEEL WAS OFF CENTER A SMALL AMOUNT.
