It's the "death rattle" and it's also completely normal. If you hold your clutch in while turning off the car you won't hear it.
My guess is you are in neutral when you shut it off. You should leave it in 1st gear when the car is off, the parking brakes in the C5s aren't necessarily reliable. Just make sure the engine is stopped completely before you let out the clutch.
