Has anybody made a write up of what needs to be done and/or what parts you need? Also what panels will need bodywork/paint?

Cobra4B is in the process of doing the conversion right now. Do a search for his thread, it's several pages long!!!! Very informative and ballsy!!!!

I had it done to a 2001 ZO6. Love it. Just finished putting the finishing touches on setting up the trunk for the top.

No, the rigidity comes from the roof bow and is still in tact in the area that could be considered the B pillar. The targa area that is removed is not structural support.
