Too lazy (and tired and busy ) to change my oil and bother frigging getting it on ramps, so I'm getting dealership to do it in their alignment pit.
I don't like trusting people, so I plan to give them one more quart than they can use, with the logic that I should get 1 bottle back; otherwise they're either stealing from me or not even doing the oil change.
Sooooooo if 7quarts is the max it can take, if I give 8quarts there's no possible way for them to use that extra quart in the car, right?

You are giving the average oil change mechanic way more credit than you should. They will probably pour all the oil in that you give them. I would not give them more oil than is supposed to go in, unless you want to get it back overfilled.
If you want to know if they actually changed the oil, all you have to do is pull the dipstick.
Of course, then you still don't know if they put $.50/qt. oil in your car and put the Mobil 1 in their car!
The only way to make sure they actually change the oil is to watch them drain it, and put it back in.
I don't think I will ever get too lazy not to be able to pull a drain plug to change my own oil. It is still less hassle than having to take it somewhere.

if they don't ask you why the extra qt I would bet they would assume...which makes an azz out of you and me...you "wanted" all 8 qts in the car. smart guy would ask you but..... you know how that will go. only give them 7 and watch them also.

Don't know about yours, but mine takes 6.5 quarts so if you give them 7, then you should get .5 back.
If you are that worried take it to a quickie oil change place and you can stand right there and watch em drain and r/r filter and then you can even pour the new oil in yourself. Most dealers wont let you in the bays for insurance reasons, but the quickie places don't care.
Here is a story from a GM dealer. My S-10 had a small oil drip at the front of the oil pan, and warranty was almost out. When I picked it up, the woman gave me the wrong receipt, it was the charge GM warranty sheet with the actual prices on it so I got to see the prices as well as the work done like the normal sheet does, I got it too. They charged for Remove and Replace engine, new oil pan gasket, 5 qts of oil, and a filter. Around $850 as I remember. I, being the extremely trusting guy that I am, checked the oil level when I got home. Humm, kinda dark for new oil I thought, so I jacked it up, and guess what? One dirty oil filter that hadn't been changed, no shiny bolts from engine being being removed, and one clean area on the front of the oil pan with a bead of RTV on it.
So back to the dealer I went, with this question: You don't want to warranty my warped original rotors to get turned, but you are willing to charge GM $850 for putting a bead of RTV on my oil pan? Where is my 5 qts of oil and filter, in the trunk of the tech's car? Needless to say, my rotors got turned under warranty, but do I trust the dealer? Never!
