Want to paint the wifes calipers on her 03 AE gold since it is a anniversary edition. Came across some used, unpainted ones I can use. I was thinking of getting them powder coated as opposed to just painting them. I was told powder coating would be prone to chipping and hard to touch up. Anyone done this and how are they holding up?

Check out The Powdercoater. He has done some really excellent work for a number of people here. If you have an extra set of calipers to send it will make the whole process a lot easier. You might consider having them done in Anniversary Red with gold letters.
As far as the durability - I've had my powdercoated calipers on the car for 2 1/2 years and they've held up great. I suppose they could chip, but they haven't. I don't think you can touch them up though.

Having mine done Millennium Yellow to match the car this coming week hopefully. Estimate was $250-$300 to do the whole thing soup to nuts, just drop off the car at LAPD in the morning and pick it up the following afternoon if everything goes as planned. Of course they're not doing the powder coating, they're having it done by one of the good ones in the area (we're fortunate to have lots of choices out here). I also splerged for a set of chrome caliper plates from Custom Corvette Accessories that I'll have put on at the same time. Should look really nice with the new chrome wheels and TPS nuts I put on last week. I'll post pics when they're done .
As someone else mentioned, they can look just as nice painted as powder coated if prepped and painted properly. For the mechanically inclined that can and want to do the job themself you can save some $.
the corvette pilot does an excellent job with powdercoating on the calipers. first rate work. plus he also adds clear coat over the powdercoating, so I would imagine it will hold up alot better than just a simple powdercoat process. I had mine done not long ago in mag red and it looks great!
The process of powdercoating is pretty cool. If you read into it, and understand it, you will find that it is one of the most durable finishes available.
