What do you call those waterfall looking objects that sit behind the driver/passenger seats of a vert when the top is down that make it look like the bat mobile ? Where can you buy them ?

Are you referring to seat back hoops like these? If so they are available from most of the forum parts suppliers. This picture is from Ecklers, however Mid America, Zip, Corvette Central and a host of others probably stock them.
