It's scary and you did probably reduce it somewhat by turning on the a/c which activates the second fan. That helps bring the coolant temperatures down which in turn brings the oil temperatures down.
This is why we use synthetic oil/filter in our C5/Z06 cars...
I hit about 290* while on the track one day. I got off shortly thereafter though as I was getting nervous of that 300* mark in oil temps. You gotta love Mobil1.
