I rarely recommend a dealer for anything but for this job this might be the smartest option. Anyone can take the old off and in with the new, but you really need someone who has been trained on how to properly make the fine adjustments to get it just right.
I had to have some work done on my Mustang convertible hydraulic system 6 months ago but the dealer didn't want to touch it for 3 weeks. I called around and found an upholstery shop that also did convertible tops that would work on it. So call some of your local upholstery shops and see if they can help you, or recommend someone.
anyone ever hear of Collens upholstery in Upland calif.? he says he is a vette owner. they say the are experts, but so did alot of other shops in the area, but thay have not done a vette in a long time so , it makes you wonder. I am fairly sure the dealers farm this work out.
Try posting in the Regional section, maybe do a search there as well. How about calling local upholstery shops or asking your local dealership who they farm out to?

Did you have a bad experiance at Corvette Specialties? or someone you know? They seemed knowlagable compaired to to other shops I talked to in the area. The other 2 shops seemed a bit "miffed" that I had my own new top and wanted to sell me new bow pads, per corvette specialties the C5 does not have them. I want to go to the best place, and if I have to I will travel the extra miles to pasadena. It is just riverside is alot closer for me.
Check with Raul at Raul's trim shop in Ontario. He has done some quality upholstery work for me in the past The last time I was there, there were Hot Rods, Street Rods, foreign cars and domestic cars at the shop all at the same time, oh, and a boat they were discussing interior options for
Ask him if he has the Ferrari at the shop yet! I want to stop by and see it.
He is a stand up guy, and one that you cannot dislike!
