My engine idles about 850 rpm and when I shut it down it spins down longer than I am used to and has some valve noise.
I would appreciate some input on if this is normal or not and what some of the stock engines idle at.

850 RPM's at idle is about right for a stock C5. When you shut down the C5 a little stumble is normal. Not what you are used to in the older car. If you are talking about valve noise when cold it is also normal and probably a little piston slap. As long as it goes away when warmed up you're OK.
I'm glad you asked the questions. I went from an 82 to an 03 and had the same concerns. I love the 03, but miss the 82, it was so easy to work on. Good luck

Easier to work on, are you kidding, the 82' I had was the biggest PIA to change the plugs on I ever owned. Only had a dozen heat shields and other assorted junk around the exhaust manifolds.
Congrats! You'll enjoy the C5 but like Mikvi I miss the old '79 for the ease of maintainance and being a bit more robust in some areas. I don't think I'll go back unless I can own a '69 roadster and keep my 98.

I had to sell the bike and the old Vette to swing the "upgrade" with the domestic chief executive. I really enjoy driving the C5 but nothing is like looking down the hood of the Stingray.
I never had much trouble working under the hood, but the dash is another matter.
If it is, try holding in the clutch when you shut the engine off. That will get rid of the "death rattle" when the engine stops. It's a known "feature" of the C5.

Put the lights up and look down the hood and fenders, very similar
to the C3 I think. Welcome and have fun with the C5.

I was going to ask the same thing is it a MN6 model?
If so, put it in Reverse (will only go with the key in the ON position) and holding the clutch in shut it down. It should be fine.
My 6-speed idles 650 rpm with AC on which it always is ON
