I have always had wood dash kits on all my Vettes. I think if they are done tastefully they look great. I've had comments after shows by the judges that I won due to the fact mine set itself apart from the other "plain old black interiors". They said it showed a touch more detail than the others. If you do go this route, the secret is prepping the surface prior to sticking on the "wood". Really clean the surface as the instructions indicate. They give you some little pads to swab the surface but they are not enough. Go out to AutoZone (or whever) and buy some Prep. About $4.00 a can and it will last forever. If it is not the middle of summer, you may want to use a blow dryer to soften the "wood" to better get it to go into bends and other surfaces.
Remember, it's your car; do what you think is going to look good.
