I'm ordering HID conversion kits for both the low beams and the fog lights on my 02 C5. I have a feeling that the 6000k will be my choice but I just need to see some more pics of both to be certain.
6000k here. I found it to be the closest to white during the night and day without looking blue. It has a very very slight blue tint at night. 8000k is too blue IMO. The bulbs are in a standalone projector.
I had 8000k in my Mazda 3 and the light output was worse than the stock halogens. It had projectors too so I would imagine it would be even worse in the vette.
I bought 5000K for my vette and I'm still not as happy as I thought I'd be. I'll probably end up with some depos or make my own projector set up sometime down the road.
So my advice is 6000K if those are the only 2 you are considering
I'll know exactly when I place my order on Tuesday. I'm guessing about $225 Canadian for both kits shipped to my door. I calculate that to end up being about $5000 US based on where our dollar is at!
Somewhere around $300 US range I figure.
Another Vote for 6000K. 4300K looks like a flashlight, 5000k glares off everything (even in a quality OEM projector) and 8000K is so blue it distorts the reflective image. 6000K HIDs produce ~2900 lumens of visible light per bulb while 8000K produce 2400 lumens.
IMO 6000K is perfect. (it's the same color as a standard white LED) Here's a few examples:

35w HID H9 PNP in Hella H9 stock projectors
My car: 55w D2S 6000K in E55 Bi-xenon w/ ZKW replica lenses:

Another vote for 6000K's. They are more "white" than others I have seen. 8000K's on my friends car look blue to me. If u want that then thats cool. Its all about what you like.
My 6000K HID's and 6000K Fog Lights. (stock housings)

What kind of housing are you using? Is it stock or ACA (per your Avetar)?
Using the ACA projector housings with 6000k bulbs. I'm actually contemplating installing the 4200k bulbs the kit came with. I like the look of the 6000k, but might want a little more light output, which the 4200k would provide. definitely would not go with the 8000k, not nearly enough light output.
