My 00 vert started running strange after gas fillup. After about 3000 rpm in 1,2 it almost sounded like a far off bike that had a card clipped to its spokes. I took it easy after that.I thought detonation or timing issue and lo and behold the service light came on. I used on board diagnostics to pull codes. Showed 10PCM P1040H. My service manual (3vol chevy) lists no such. Anyone have any idea if im wrong, the manuals wrong or the cars wrong.

Not sure what the P1040 code is, But seeing it has an "H" after it means it is a history code and NOT a current code. I looked for the 1040 code and found nothing.
Check your gas cap.
Right now its raining like hell in my part of CT. I'll take her out for a road test when the weather clears. I put a can of dry gas and octane booster in case it was s__t gas all along.

I had erased the code by holding the reset but didn't know if this cleared all history codes. Shouldn't the service light thrown a current code.

you will see the display read manual mode and show each section, That is where I delete the codes, You can always run the test again and see if anything comes up.
You will only see a "C" code if it is still active, One thing about the C5 is they can for no reason show a code, Maybe grounding issues,,,Who knows.

I could be wrong but, I've heard a long time ago....dry gas and fuel injectors don't mix well together...
I can't be positive about the dry gas however i have run it in my 85 for years.I ran it in my camaro for over 300,000 miles (85 z28). thats all i know. As far as code i didn't transpose the #s. That was my first thought when the shop manual codes started the P's with no 1040.only 1111 #s.
