The targa top that you are referring to is the removable roof panel for the Coupe.
It could either be a glass or solid panel...

The Z06 has a "Hard top". It's not removable. It's a "fixed roof" which is also another term used in the vette world. The Z06 was only available in this fixed roof configuration.
To confuse you even more they do make hard tops you can put on your convertible too.
Standard C5: Removable targa top as shown NorCalVette Kid's post. Has a hatch style trunk.
Z06/FRC C5: Only available in a non removable "hard top", aka "fixed roof". The FRC is "Fixed Roof Coupe". These have a trunk and not a hatch like the standard coupe.
Convertible C5: Kind of states the obvious but there is a hard top available which looks a lot like a Z06/FRC with it installed.
Top left - standard coupe.
Top right - Convertible.
Bottom - Z06
