I have a 98 coupe, 100K miles, I've had 3 sets of firestone firehawks and looking for something new, I'm looking to spend around $600 for the set as I only use the car as a "toy"

Not sure the size you have, but I love my nitto's. I have also not heard anything negative about Kumho either.
Shoes are the most important part of your car, specially Corvettes and I am sure you know that. for 600 dollars I'd go with Cooper Zeon 2XS the widest is a 275/35-18 but its a fairly descent tire.
Now you want a good tire the NT05 is probably one of the best.
Take a look at the General Exclaim UHP's have them on the wifes vert, nice ride and quite.
I second this recommendation. I just put a set on my 04Z and really like them a lot. Quiet and good in the rain. I was really pushing them today and are a predictable tire. I had the Firestones in the past, these are better but same league.
I bought a set of Continental Extreme Contact DWS's and like them very much. A little bit more money than your target amount and not super high performance dry tires. But they ride very nice, look very cool (they have a assymetrical tread pattern that everyone comments on) and they evacuate water really really well giving me a secure feeling in the wet.
