Hey guys, I did a search and was surprised to not find as many threads talking about oil as I expected so here goes.
Coming from the lt1 world, I personally use German Castrol 0W30 in my lt1 Trans Am and I've also heard great things about Penzoil Platinum.
I'm new to the z06 world so what's recommended? I've hear Mobil 1 quality has gone down some in the past few years and there are better options so I want to make sure to get the best oil the vette.
Which forum did you search in? Oil debates are very frequent in C5 Tech. They get so contentious that they usually get locked down. Everyone has their favorites.
Finding past threads depends on the keywords. Try "mobile 1", "royal purple", "amsoil", etc in C5 Tech. Either search or search this forum (in the red banner) should give you plenty to read as nothing gets deleted from the archives.

I will be switching to Penzoil Ultra this next oil change. It's supposed to be even better than the Penzoil Platinum, which I believe is comparable to Mobil 1.
I am new to the Z06. I'm also using German Castrol 0w-30.
It is one of the cheaper full PAO oils that I can get locally. I was turned off to Mobil 1 5w-30 when they supposedly changed from PAO to Group III.
The GC was just on sale at Autozone for 5 qts + Bosch filter for $30. Its a hard combo to beat.
The GC tests thick for a 30 weight oil so it will probably lose out to Mobil 1 on the dyno. I am going out of my way to run the GC because I believe it will protect the engine better for same price as Mobil 1.
If I was rich I would use Motul 300V in everything I owned.
