I'm in the market for a 2001-2002 coupe. Being new to the Corvette world, I'm curious if there any issues I should be looking for when purchasing these model years.
all of those above problems are common on all C5 models. I would check wheel bearings and suspension arms,links ect. oil consumption.
also check the codes on the D.I.C.
As noted above, check the DIC for codes. Specifically, be looking for ABS and Traction Control codes. I would also check the battery area for acid corrosion. Check the passenger floorboard and fuse panel area for signs of mold\wetness.

I bought my 2001 with 32,505 and 2 years and 3 months later traded it with almost 70,000 miles and never had one single issue with the car at all and definitely nothing with regards to the engine consuming any oil.
I miss the car now as I just traded it this past May 31.
In addition to what everyone else said you should expect diff leaks which I already fixed twice on my 02 over a ten year period. If it hasent happened yet on the car you looking at it will sooner or later.
