Default ready for new headers

I'm almost ready to order a set of headers for my 01 Z06. This is not a guestion about which headers are the best design or best in performance gains. A mail order tune has been installed and the rear O2 sensors were turned off and the air pump was turned off.
Now I want a set of headers and a catless X pipe that do not have air pump flanges. I know that plates can be used to block off the air injection flanges, but to me, that just looks bad. I enter the car in shows and I want to keep the underhood area looking good.
Why do many header companies offer "catless" X pipes and headers that still have the air injection flanges? I thought the purpose of the air injection system was to add extra air when needed to help the cats work better. So if the X pipes have no cats, why not sell headers that match the X pipes?
I have found 1 or 2 companies that can sell headers with no air flanges, but why do most header companies not offer headers with no flanges when they offer "catless X pipes"? They could save a few bucks and have a matching combo.

I'm sure if you were willing to wait, there are some companies that could build a set custom for you without the air tube connections. Why not just call them direct and ask. Other than that though, why not run cats? They cost very little power and it is federal law requiring them.
