Default T stat

looking at replacing the stock thermostat in my 01. Looking at the 165 degree unit. How much of a decrease in operating temperature does this yield. My car is stock,and runs about 199 on coolant and around 208 for oil

If you change the TStat to 165, you will need to tune the car for the fans to come on at that temp as well, or it wouldn't matter much, at least in the Summer time.
Without a tune it will run cooler in the Winter.

My handheld programer information says that I can adjust fan turn on temperatures. Do I need the 165 thermostat or just change the fan adjustment.

If you are running 199 now, just a Tstat shouldn't make any difference. As for the fans, what temp are you shooting for? (And why?)

You cannot change the fan setting without changing the TStat. The fans will be running all the time.

I have heard that the engine need a minimum temperature to run properly. I would like to see 180 degrees. This would also help lower the oil temp.

The car came with a 195 tstat. It was designed to run in the 200-225 range. But if you really want 180 you will need a 165 tstat and fan changes.
