I don't think you'll have any problems with the fronts but the seller doesn't list the offset on the rears. Here's the specs for the stock wheels -
C5 coupe/convertible:
Front 17x8.5", +58mm offset = 7.03" backspace
Rear 18x9.5", +65mm offset = 7.81" backspace
C5/Z06:
Front 17x9.5", +54mm offset = 7.38" backspace
Rear 18x10.5", +58mm offset = 8.03" backspace
If the rears are close to the specs above, they should fit.

the 19x11 needs to have a +63 to +65mm offset for a perfect c5 fit.
a higher offset will rub on the inside and a lower offset will stick out.
go with a 305/30/19 for a perfect fit.

I run 19x11's on my 01 Vert and run a 325/30 19 with no issues what so ever.

Most tire manufacturers will state a rim width range of between 11" to 13" as acceptable for a 325x30x19 tire. the optimum rim width is usually stated as between 11.5" and 12". So it will depend somewhat on the individual brand of tire. But others here actually running that size wheel and tire will provide the most input.
