I found a 2003 Anniversary 6 speed coupe with less than 500 mi and all looks new like it should but not sure of the value. Any help would be appreciated. Thanks
If he really wants to sell it, he should have a price. That is such low mileage car that I would be concerned about the condition of several of the systems, such as brakes, cooling, tires, etc. I would guess a car with that mileage would command a price in the mid thirties which is more than I would pay for any C5. You can get an exceptional C5 with 20K - 30K miles in the mid twenties and still have a great car, that you wouldn't be afraid to drive.
If you want it for a collection, I would say $25K - $28K
If you plan to drive it, it's worth less IMO. Say you pay $28K and drive it 8000 to 12000-miles in a year then it will depriciate rather quickley to true market value of around $19K. Even though it only has 500-mi, there is no warranty, tires should be changed due to age, fluids changed, etc. Just my 2-cents.

I wouldn't pay over $26K or so for the car. I do agree with PUMP03 - if you drive it a lot, it will depreciate very fast. But as with anything, it's worth whatever you are willing to pay for it and the seller is willing to accept. You say he has given you an idea of what he wants for the car - care to share that info?
We see these ultra low mile examples of Anniversary Editions come along all the time.
With each passing year, the number of these examples never seem to lessen, only the dollar value on them lessens.
Production Numbers on the 1SC Anniversary Edition package in 2003 are: 7,547 Convertibles, and 4,085 Coupes.
This equates to 33% of all 2003s produced.
This car averaged only 50 miles per year, and was over $55,000 new.
We can see where the seller could be justified asking somewhere a bit north of 30, however as the replies here so far have indicated, buyers place the value in the 20s.
