A good rule of thumb is all your fluids...oil, coolant, tranny and differential. I personally use Mobil 1 for oil and Amsoil for tranny/differential. For plugs and wires, I got a set from a forum vendor, gmpartshouse. I went with the "red" wires and AC Delco plugs. They were very easy to work and deal with.

Sounds like it would be a good idea to swap out the stock valve springs before the entire engine grenades. See related threads within this portion of the CF Z06 area.

"All fluids" should include power steering fluid and clutch fluid.
For the power steering system, suck out the power steering fluid resevoir periodically with a turket baster, and replace fluid to the same.
Very important to replace clutch fluid on a regular basis. For this, either a turkey baster or just dip a rag into the clutch fluid reservoir. Then replace dirty fluid with clean. Z06 clutch is very sensitive to clutch dust in the clutch fluid.
What clutch fluid to run? I doubt mine has ever been changed, and I know it has not since I bought the car. I can suck it out with the bastor, sounds pretty simple and top it back off a couple of times to let it cycle through.

I use AMSOIL's racing engine oil and their racing brake fluid (in both my brakes and clutch) in my 02 Z, but the above are the same tranny and diff fluid I use in mine. The engine oil listed above is what I used in my 06 CTS-V which was my daily driver from 06-09. I use the NGK 7397 Iridium plugs in mine.

Motul RBF600 for the clutch and brakes Invest in a remote clutch bleeder. Totally worth having it put in. The baster thing can cause air in the lines and doesn't fully flush the system. The clutch slave is only an inlet and a bleeder, it doesn't actually circulate.

As said when buying a used car its always a good idea to flush the fluid unless you know it was recently done. As far as plugs you have alot of options and none really much better than another but i prefer the NGK iridium's with a good quality wire. Stay away from nology wires as they NEED to be used with buru plugs and its a giant waste of money.
All fluids(oil, trans, diff, brake, clutch, powersteering, coolant). Filters(air, fuel). Plugs and wires. I'd also test your battery and clean up all the grounds just to be safe.
Other then that, drive the **** out of it and enjoy every minute.
