Also keep in mind the expansion tank cap allows the system to pressurize. Pressure raises the boiling point of water. At atmospheric the boiling point of water is 212, add a 15 PSI cap on top of that and it should raise the boiling point of water to approx 240-250, a dash of coolant and you're at 250-260. A proper cooling system in proper working order would run fine on straight water.
A lot of the benefit of coolants come from your protecting agents, anti-rust/anti-corrosion/pump lube, and of course freeze protection.
