I leave my wheels on the car. I do have carpet squares that I park on to eliminate the contact of the tires to the cement.
People worry about the tires getting flat spots. I don't. My motorcycle develops flat spot more readily than my car. The "flat spots" go away once the tires get up to operating temperature. I think flat spots may have been an issue many years ago but the modern compounds don't have the same issues. Although tires still dry rot. Fortunately mine never get that old.
I'm a believer in "don't start the car unless you can actually run it."
Agreed.
Everything the OP said plus a good wash/wax, stabil in the tank, carpet squares under the tires with some extra PSI in them, battery on tender, plastic bags wrapped around exhaust tips, insurance set to "storage" and a good car cover. Done and done. Leave her alone, no need to start her up unless you go for a long cruise. My Z pops right off in the spring after sleeping for almost 6 months.
