Re-doing the seats is not an extremely difficult task but it takes some patience. A lot of DYI threads can be found to cover most of the topics relating to the seat covers. You can find good deals on the foam and new covers and you can customize your interior and get the extra support you're looking for. I'm sure you can get a local leather or upholstering shop to customize your seat with anything you may want to add as well. Along with that you may save a a couple of $K overall.
I am really leaning towards the Sparco EVO 2 US. I am a bigger guy and really cant stand the lack of support in the stock seats. I have helped a friend do the Corvette Essentials seat covers/ new foam in his car and even though its a 1000 times better than stock its not what I am looking for. I drive my car on the weekends only for the most part and the occasional corvette run + track days so I think a fixed back seat will be ideal for what I am looking for.

No one can give me a definitive answer though on whether or not I can use the stock seat belt with these seats and have it provide protection. I have 6 points in the car but really do not want to do them every time I go to the post office...LOL...

I still have my stock seats, in perfect condition. I did add the headrests that make a big difference.

I hear you, as I said the before you should be able to. You will have to make sure that whatever bracket you use has a location to mount your seat belt receiver. The seats did fit with the Marrad bracket I used without having to remove the plastic molding which would normally cover the seat belt retractor so had I had the OE seat belts in the car, they could have been operational. Another thing to take into consideration is where the OE seat belt will rest on your body once you put in these seats.
These two should show you that you could still use the OE seat belts and should help you:

This one shows an install of a Marrad seat in a C6, the mount used is the marrad bracket which can be used on C5 and 6; it shows about the OE seat belt being switched to the bracket and it has a picture showing how you would be able to use the stock belts with a after market seat:

The back looks fine. The top and bottom straps attach in the middle with velcro. They are great. Real nice to be able to rest your head on them when driving.
