paint white, polish, or leave them?

Are you talking about the valve covers? If so, would be a toss up between leaving them alone and polishing them. Would not paint them white.

Polish and if you need some color do the letters only. Keep it simple and still have a different look.

They currently appear to be "as cast". I woud either leave them that way, or paint them black, and remove the paint from the letters.
Do you have ANY idea how hard and time consuming it would be to polish them?? I believe the manufacturer does a "tumble polish" on them, if you buy the polished version. That's where they put the covers in a large rotary tumbler, filled with abrasive beads, and tumble them for several hours....

They would look ok polished, but too much shiny stuff IMO.
If it were mine, I would go black. Paint the coolant and washer fluid tops gloss and everything would flow.
