Yellow or black calipers
For a yellow car,I will be ordering paint tomorrow. Would you prefer black with yellow letters. Or just a all yellow caliper?

JMHO, but yellow car-black calipers with yellow Corvette scripts.

Of the options you mention, I would go with black calipers with yellow lettering. But my personal preference would be torch red calipers.

I chose early Ford Blue(lighter), they were black w/o painted letters. My next choice would have been Torch Red. Have fun

Idea !
Here is an idea for you. Paint the calipers your color of choice, then take a flat sanding block and carefully sand the letters with progressively finer sandpaper. You can make the letters look like chrome!

Seems like everyone has red calipers now (including me on a black car), so they're getting a little old. I still like mine though and they are way better than stock!!!!!

With the choices from the OP, I would go yellow.
I have a TBSS with which I painted the calipers black to match the body color and with exception to the decals I applied to them, they just kinda disappeared. This is behind chromed 6 spoke OEM wheels in case that is relevant.
Next brake job, they're going red, but I did exercise the thought of them being yellow.

red calipers aren't uncommon but are probably the best looking in my opinion. of your two choices, I am torn between yellow and black but would choose black based on easier to keep looking nice.
