Tomorrow I'm driving my '01 vert back home from Columbia SC to Round Rock TX. I'll be taking I-20 all the way to Dallas then 35 to Round Rock. Any places I "need" to stop for dinner or breakfast along the way?

Not just picking it up. I have only had it since april but drove it to SC for work. My work schedule changed from 2 weeks in SC and 2 weeks in TX to 1 in SC and 3 in TX. So I'm driving it back so that I get to drive it more rather than less.
Oh heck, pack a sack full of sandwiches and that way you won't have to get out of your Vette all the way (almost) home!! That way you'll have a loooong fun drive back to Texas. Just be careful.

I don't have anything specific, but I look for breweries as rest stops. The brewsnews keeps a map of these types of places.
The places are not a chain place, and have to be very clean to make beer. PLus the water is always filtered and the food is at beer type prices, not bad to save a little money in case you find something on up the road.
Around here, I know of a couple of breweries and BBQ. A genius concept, but it ain't Texas when you bite in. But they have nice regular side dishes, not a bunch of wiped out crap that disappeared from other restaurants long ago.
