Go with a vert, your in AZ wouldn't the top be down mostly all the time ? I mean the temp is good and how often does it rain. You won't have a problem hitting your head. JMO
I'm 6'2" and I was staring over the top of the windshield on the verts I drove, with the top down. At 6'6" you'll probably be doing the same.
I wound up with a coupe with the power sport seats, and I keep the seat down and reclined. I put some leather head rests on and added foam to them to keep comfortable though, and it works fine on long drives.
You should make damned sure you don't have an issue with scraping the top of your head with the top down if you go with a vert.

I'm looking at a 03, single elderly owner, with 41k on it for $19500 (private seller) Or a 2005 Z51 with 90k on it for $16 (private seller)
Both are coupes. The 2005 is way sick, but 90k is a lot of miles to start with, you know? I mean, if I bought a car at 40k and drove it myself until 90k then at least I know what I'm dealing with.

If you find one you like, at a price point that meets your needs, and you're not buying it for the collector "resale" value, I'd just go for it. Maybe set a limit on how high mileage you're willing to go and find your new baby.
Im 6'4" and I fit fine in my 2001 vert.Payed 20,000 35000 mi.
I'm sold on a coupe (I like the look better), which from what I gather is just ever so slightly less head-roomy than the vert. I'm more concerned about the leg room, since I'm a 36" inseam. (Which is why I'm also only getting an automatic). I'm never going to drive in it for more than an hour or two straight, so as long as it isn't unsafe or physically painful, I'm fine with a slight squeeze. As long as the seat goes back and reclines enough, I think I'll be ok.
I had a 99 T/A with T-Tops and I fit fine, anyone know how that compares to the C5?
Does anyone know if my Torq-Thrust M wheels from my T/A will fit on a C5? (I want black rims with a white car, and figured I already have the wheels...). The rear tires are 315's.
