Just ordered new wheels 18x9.5 up front with +57 offset and 19x11 with +65 offset for the rear. I am looking to purchase PSS Michelins I am looking at 305/30/19 in the rear and 265/35/18 up front. I have been told I would be better off with a 305/35/19 in the rear and a 275/40/18 up front need help making the right choice. I don't want to throw off the computers active handling.

You won't throw the AH with either choice. The first one you mentioned is the proper replacement for OEM +1 wheels and +10mm rear tire width. That's what I currently have, as well as many other members here. The second one you mentioned isn't possible since the PSS isn't available in 305/35-19, but that would be a combo one would use to give the appearance of being lowered without losing ground clearance, since those tires are much taller.
I had those exact same wheel and tire sizes with different offsets for a while on my Z06. No codes or issues at all. The OD of those tires are nearly identical to the factory sizes.
