I gave the carpet a healthy spray of vinegar. I feel has helped already. Tomorrow, if the smell is still there I'll remove the carpet and give it a more thorough cleaning with the vinegar.
Evilash has been kind enough to offer me his steamer and/or carpet cleaner to wash it all afterwards.

I buy tons of Milk every few days (4 big sons) and carry it in the M3 and Vette, and ALWAYS have each container double bagged. I never ever want them to sweat or leak in either of my Cars.....
Its not too hard to remove the carpet, and also you can buy special odor removing spray bombs.
I hit a skunk full-on at 40mph; the smell was very strong but not gag-reflex overpowering. I dunno if milk and skunk are related in their "stink qualities" but I killed the skunk smell completely... maybe this will work for you if you're inclined to try it. The ingredients are cheap enough.
I found this first recipe on the 'net; it seems a pretty common tact:
spray the affected area with a mixture of
1 Qt 3% hydrogen peroxide
1/4 cup baking soda
1 tsp. liquid soap
It got out about 70% of the smell, and I decided to try ammonia, but it's too strong full-strength, so I used 50/50 Ammonia and water.
then follow that with
Brakeleen
I laid a 2' diameter fan on its' side and blew the air under the car at me. Successively after each treatment, the smell lessened and lessened until it was so faint after the 50/50 Ammonia/water that I chased it with Brakeleen more out of brutality than need.
I bought a couple gallons of milk the other day and made a quick stop before I got home. A couple days later I smelled something rotten
A milk cap was crooked and leaked. I've scrubbed with Dawn and water but I think the issue is in the foam bellow the carpet. I still smell it after three attempts. Pull the carpet out and wash and rinse and let hang dry and you will be good to go!
